I've read some of the threads on clean (semi) eating. I'd like to start, and I know it's not going to be easy. I 'm looking for clean eating ideas/recipes especially for lunch and dinner. Something easy and tasty.

Would you share your favorite dish with me? Would you share your shopping list tips also? Thanks.

It's not really a recipe, but one of my favorite treats is sweet potato chips. I slice them really thin, then spray no-stick spray on them (on the tray too) and sprinkle on some salt. I cook them around 400 degrees for about 30 minutes - you have to keep an eye on them, for some reason the baking time varies. They are delicious - and I can't stand sweet potatoes any other way!
 
I eat a lot of recipes from the Eating for Life Cookbook.

Turkey meatloaf and mashed potatoes
Asian Stir Fry (lean ground beef, brown rice, veggies, spices, etc.)

Also:
Chicken baked with brown rice and gravy

Eggs with potatoes and salsa

Cottage cheese and fruit
 
Carmen, you can usually clean up any recipe whether it started out clean or not. Switch to whole wheat flour, I use Smart Beat Light, you can cook with it. Use Splenda to sub for sugar. Use FF half and half, skim milk, etc.

I make a mean turkey meat loaf
3 lb ground turkey
1 onion chopped .
1 cup celery (I use food processor)
1 c carrots shredded.
1 pack onion soup
while wheat bread crumbs(Or oatmeal)
Bake for 45 min on 350
Drain off any fat.
Add 1 can + 1 cup water fat free cream of mushroom soup
Bake until done.
It is to die for.
I make a big one and we have it for lunches and meatloaf sandwiches.

A cook book I reach for periodically is:
Simply Best From Weight Watchers.

If it is still in print you can find it at a books store or a WW meeting place.

It has great recipes for Chicken Caccitore, Veggie Chili which freezes well, great muffin recipes that also freeze well and several other recipes that I have made time and again.

I need to butt in here...Splenda is not "clean"...It's still a chemically changed (processed) sugar...Is it REALLY sugar??

"There is no question that sucralose starts off as a sugar molecule, it is what goes on in the factory that is concerning. Sucralose is a synthetic chemical that was originally cooked up in a laboratory. In the five step patented process of making sucralose, three chlorine molecules are added to a sucrose or sugar molecule. A sucrose molecule is a disaccharide that contains two single sugars bound together; glucose and fructose.


The chemical process to make sucralose alters the chemical composition of the sugar so much that it is somehow converted to a fructo-galactose molecule. This type of sugar molecule does not occur in nature and therefore your body does not possess the ability to properly metabolize it. As a result of this "unique" biochemical make-up, McNeil Nutritionals makes it's claim that Splenda is not digested or metabolized by the body, making it have zero calories."

This is one of MANY articles that I've read in the past couple of years about Splenda...PLEASE, if you're removing "unclean" foods from your diet, take this out, too!!!

Unfortunately, things like cream of mushroom soup also fall under the "unclean" category. Clean foods are things that are as close as possible to their natural state. It's pretty simple. It just means preparing food without using any processed ingredients. Lean meats, fresh veggies and fruits, lots of whole grains.
 
For lunch I love a quick pita sandwich.
Whole grain bread (1 slice) or pita (1/2)
Smoked Turkey (I smoke a turkey breast about once or twice a month)
Romaine or spinach lettuce, red onions, red peppers
I make my own dressing

- 1/2 to 1 tbsp of red wine vinegar
- Mrs. Dash spicy or some kind of creole spice

For dinner either chicken breast, center cut boneless pork chop or tuna with big salad or fresh green beans with spicy seasoning. (I TRY to eliminate unhealthy carbs at dinner. Once I start with bad carbs - I cannot stop! I usually serve the same meat and salad to my family but I also give them rice or a potato of some kind. If they are having pizza or something totally off my diet I eat an egg beaters omlet with my fav veggies.
I was hard for me at first - but eating healthier helps eliminate bad cravings. Good Luck!!!
 
I love Bill Phillips' Eating for Life cookbook! I've made a ton of his recipes with great feedback. In fact, I gave several friends this cookbook as a Christmas gift last year (and a couple this year, too)!
 
uhhh, I don't think Splenda is that big of a deal. If you're trying to get uber technical about every last drop then okay I guess, however, splenda works for me. I think a really clean diet w/ splenda is not a problem. If that's what you can handle as a sugar substitute there are bigger things to worry about.

I agree. And there are so many better, natural alternatives to it: stevia, agave nectar, rice syrup, maple syrup, date sugar. Sure, they have more calories, but all "real foods" have calories.

I'm always stumped as to why people consider Splenda 'clean" ? Maybe some good marketing?
