~~~~clean-it-up-tuesday~~~~

Oh, Robin! Meatless meal! I keep forgetting to post this for you. Open a can of refried beans. Mix in a small can of chopped green chiles and a small chopped onion. Spread some on a corn tortilla. Put the tortilla in a saute pan. Put cheese on top of the bean stuff, put another tortilla on top of that. After a couple minutes, flip. Heat until the beans are warm and the cheese is melted. Repeat as desired.

I cut them into quarters. I eat two whole ones, Jim eats two and a half. Very yummy and fairly clean. I use full fat cheese because I'd rather do that and use a little than low or fat free and use a lot. But that's just me! If I were really good, I would make a salad to go with them. I am never really good.

Hi ladies! Family is in town so I will be sort of MIA for the week, but wanted to drop in and say hello! You guys are a chatty bunch today! Eats today are clean, but don't ask about yesterday. Can we say homemade baklava? Anyway, I think my ankle is decent so I might go for a really light jog. I don't have time for personals since I'm trying to squeeze in work and family time while keeping an eye on my baby. I'll try to be back later tonight when all is calm and post some personals.

I agree with Lisa, chatty bunch today - and every day!

Eats have been totally on-point today. I got home and went to make dinner and I didn't have the main ingredient :mad: so I improvised. Dinner is "oven fried" chicken instead of the original recipe, with gr beans and corn. Hope it's good!

Hoping for some Essentrics after dinner. Gotta log those exercise minutes!
 
Anne: Here you go!

Mix / whisk in smallish bowl:
1/3 cup broth (chicken or veggie)
1 T. cornstarch
1.5 t. hoisin sauce
1.5 t. minced garlic
1.5 t. ground ginger
3 T. soy sauce
2 T. rice vinegar

Then if you are using chicken, slice it thin and dust it with 2T. cornstarch. Saute asian veggies (use whatever kind /brand you like) in sesame oil, add chicken and cook it on medium high. Pour in sauce and stir until thickened. Eat!

Tonight I am skipping the chicken and just using veggies. Trader Joe's has a fresh ready to cook pack of asian veggies that I use all the time. I'm sure frozen would probably work too.

i had salad w/ some leftover spicy chicken stuff i had frozen! yessss!!!

i hope i'll be able to leave for my run!

Got 4DS KB done earlier then took Milla to dance. Now I'm waiting for Darrin to grill some chicken and chicken sausage. I'll be having a grilled chicken salad.

Anne, I'd try the 10k, but I promised Danica we'd train for a 5k together-do it with us and use it as an easy run:) I like the sounds of your refried bean quesadilla:) I love MExican in all its forms!

Patti, I haven't made anything Asian in a long time. Your sauce looks yummy!

CS done, plus a few minutes of stretching (aka "pizza" making) with Collin - 32 more minutes, for a grand total of 82 minutes today!

Kate, sorry about Julia! ^5 on keeping it together with the salad. But remember - runners need extra carbs!

Patti, your sauce sounds yummy too! My boys wouldn't eat it though...

For those who don't eat/like refried beans: Take a can of black beans, drain and rinse, then put in a saucepan. Add a bit of water (.5 cup or so) and add fresh cilantro and lime juice. Let it simmer until beans get a bit mushy. Great side dish or quesadilla filling! If you've got some pico de gallo, you can use that instead of the cilantro and lime. SO GOOD, and good for you!

i am so thankful for my bed. such a rough evening with 1 sick guy and 1 highly energetic guy. but,we made it thru, and i did my day 85% good - had 1 extra snack i did not plan on, and i did not need the cals, but it was clean. what can you do, you know? anyways, tomorrow is another day
 
Brand new babies right after birth. Ellie's is a little more immediate. Annabel's is the next day.
