Arrgh! Darrin just stopped by with Red Wing cupcakes my uncle made-chocolate cupcakes with buttercream frosting, an oreo for a puck, and buttercream frosting for the stick! Save me!!

There's only 4 cupcakes-I'll give one each to the girls (Nevena's gone for the night) and one each to my neighbor's kids:) That solves that problem! Phew!

Kate, I signed my girls up for the summer reading program at our library and a six week series of creative arts classes-sculpture, painting, writing, theatre, dance, textiles. All free:) Another library near us has free movie Mondays. And I also found a picnic in the park series with music, clowns, inflatables, etc. My cousin gave me a link to the Museum Adventure Pass-get either 2 or 4 free admissions to area museums, etc. I'll be watching the neighbor boys M/W/F from 8:30-5:30 so I'm trying to figure out what to do that's cheap and easily done by one adult with 5 kids! I'm thinking about signing the girls up for something on those days just to catch a break!

Off to do some cardio!

I got to run again in the am today!!! I love that DH doesn't start work 'til a little later. Anyway, I'm in the range of 10min miles for at least 3 miles. We'll see if I can keep that pace up at 4-6 miles. I haven't had much time since DH has to leave for work, but one day I will get up earlier and run earlier so I can at least clock in 4 miles which should take me about 40min. I have to also factor in the walk time to the park and walk back home which adds on to my total wo time. We'll see if I can peel myself out of bed at 6am. Yikes, I'm not a morning person. Bfast was toast w/pb, boiled egg, and yogurt. Eats have been good, but I'm overeating. I'm feeling work stress and I need to stop emotional eating. Anyway, better get back to work.

Caribbean Pork Tenderloin
Serves 4

Using prepared mango chutney adds flavor and cling to this sweet-sour glaze.

2 pork tenderloins (1 1/2 to 2 pounds total), cut crosswise into 1-inch pieces
Salt and pepper
3 tablespoons vegetable oil
1 onion , chopped fine
1 red bell pepper , seeded and chopped fine
1 jalapeño chile , seeded and minced
1 teaspoon ground cumin
1/4 teaspoon allspice
1 (9-ounce) jar mango chutney , such as Major Grey's
1 teaspoon grated zest and 3 tablespoons juice from 2 limes
1. Pat pork dry with paper towels and season with salt and pepper. Heat 2 tablespoons oil in large skillet over medium-high heat until just smoking. Add pork and cook until well browned and meat registers 145 degrees, about 4 minutes per side.

2. Add remaining oil, onion, bell pepper, and jalapeño to empty skillet and cook until lightly browned, about 5 minutes. Stir in cumin and allspice and cook until fragrant, about 30 seconds.

3. Add chutney, lime zest, lime juice, and any accumulated pork juices to pan and cook until thickened, about 3 minutes. Season with salt and pepper. Spoon sauce over pork. Serve.
 
Spicy Glazed Pork Tenderloins
Serves 4

1/2 cup pineapple juice
1/4 cup lime juice from 2 limes
1/3 cup packed light brown sugar
1 tablespoon molasses
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1 jalapeno chile , seeded and minced
2 pork tenderloins (12 to 16 ounces each), trimmed of silver skin
Table salt and ground black pepper
2 teaspoons vegetable oil
1. Stir pineapple juice, lime juice, brown sugar, molasses, cumin, cayenne, and jalapeño in small bowl. Pat tenderloins dry with paper towels and season with salt and pepper.

2. Heat oil in large nonstick skillet over medium-high heat until just smoking. Cook tenderloins, turning until browned on all sides, 5 to 8 minutes total. Reduce heat to medium, add lime juice mixture, and cook, rolling tenderloins to coat, until mixture is thick and syrupy and internal temperature of tenderloins registers 140 degrees on instant-read thermometer, 9 to 11 minutes.

3. Transfer tenderloins to cutting board, tent loosely with foil, and let rest until internal temperature rises to 150 degrees, about 10 minutes. Cut tenderloins crosswise into 1/2-inch-thick slices, arrange on platter, and pour glaze in pan over slices. Serve.
 
Herbed Roast Pork Tenderloin
Serves 4 to 6

Pork tenderloins can vary greatly in weight; try to find 2 large roasts for this recipe. We prefer to remove the tough silver skin with a paring knife before butterflying. Save leftover meat for Hoppel Poppel.

3 tablespoons unsalted butter , softened
2 tablespoons coarse-grain mustard
1 teaspoon grated lemon zest
1 teaspoon fresh lemon juice
1 garlic clove , minced
1 tablespoon minced fresh sage
1 tablespoon minced fresh thyme
Salt and pepper
1 teaspoon sugar
2 pork tenderloins (about 3 pounds total)
1 teaspoon olive oil
1. Adjust oven rack to middle position and heat oven to 450 degrees. Using fork, beat butter, mustard, lemon zest and juice, garlic, herbs, 1/4 teaspoon salt, and 1/4 teaspoon pepper in bowl until combined. Reserve 3 tablespoons butter mixture. Combine sugar, 1/4 teaspoon salt, and 1/4 teaspoon pepper in small bowl.

2. Pat tenderloins dry with paper towels and, following photos 1 to 4 at left, butterfly tenderloins, spread interior evenly with herb-butter mixture, interlock tenderloins, and tie securely with kitchen twine at 1 1/2-inch intervals. Rub pork with oil and sprinkle sugar mixture evenly over exterior.

3. Roast meat on rimmed baking sheet until exterior is golden brown and meat registers 140 degrees, about 35 minutes, flipping pork halfway through cooking. Transfer to cutting board and brush top of pork with reserved herb-butter mixture. Tent with foil and let rest 10 minutes. Remove kitchen twine. Slice and serve.
 
Grilled Pork Tenderloin with Corn Salad
Serves 4

6 tablespoons extra-virgin olive oil
5 tablespoons red wine vinegar
2 cloves minced garlic
1 teaspoon ground cumin
Table salt and ground black pepper
1 package frozen corn (9 ounces), thawed
1 can pinto beans (15.5 ounce), drained
1/4 cup chopped fresh cilantro leaves
4 thinly sliced scallions
2 pork tenderloins (1 1/2 to 2 pounds each)
1. Whisk oil, vinegar, garlic, and cumin in large bowl and season with salt and pepper. Reserve 1/4 cup vinaigrette. Stir corn, beans, cilantro, and scallions together with remaining vinaigrette. Cover and let sit while grilling pork.

2. Season pork with salt and pepper and grill over hot fire until browned on all 4 sides and internal temperature reaches 145 degrees, about 12 minutes. Transfer to cutting board, tent with foil, and let rest for 5 minutes. Slice pork into 1-inch-thick pieces and drizzle with reserved vinaigrette. Spoon corn salad onto individual plates and top with pork. Serve.

hi anne - how was the training?

spent the morning at school, home at 2, aidan napped and i did me upper, and b and g stanbding only. took adian for a short walk. i feel good. i have been super clean today and am now hungry post dinner, so i will have some milk and cot cheese. i feel good, though, b/c all day i have felt like i needed lots of rest and food, and i resisted it all.

open house went okay. i think some people are going to amke a low ball offer. we will see if it pans out. see you all in the am
 
morris, our vaca is a week and a half in traverse city. thee 1st cpl nights we'll be at grt wolf lodge, than we rent a condo on grand traverse bay for a week. we tend do the same thing every year. we may go up to mackinac for a day trip.

Milla learned how to ride a two-wheeler! Danica is the one who taught her:) Now I can chase them on my run/walks:)

KLaudia, Sorry about the Taco Bell!! Mercifully, I find that place completely disgusting!:p Not one thing there I like!
We are SSSOOOO behind on teaching the girls the 2-wheeler thing! The biggest problem is we have no good even place for them to practice. Our driveway has the sllghtest incline that makes it hard, and we live on a country road where the minimum speed seems to be 60! Not good!

Katie, WTG on no cookies! Schwanie, as we call him, comes here Thursday. We usuallyhide from him!:p:eek: The girls think its so fun! But I just dont need him every 2 weeks and I feel horrible turning him away! Thank goodness for the garage to park in!
