Cherry Almond Bread

1 1/4 c. milk
1/2 t. almond extract
1 T. butter
3 T. almond paste
3 c. bread flour
3 T. sugar
1 T. gluten
1 1/2 t. salt
2 t. yeast
1/2 c. chopped dried cherries
1/2 c. slivered blanched almonds

Bread machine:
Add all the ingredients except cherries and almonds. Set machine to light. When beeper sounds, add cherries and almonds.

(I usually only make this to dough, then knead, shape, raise and bake the loaf. Sometimes, if left in the machine to bake, the cherries don't get mixed into the dough well.)

By hand:
Warm the milk, sugar and butter. Mix about half the flour and the other dry ingredients in a large bowl. Add the milk mixture and other ingredients and beat at high. Add as much of the rest of the flour as possible, then turn out onto a floured surface and knead until smooth
adding additional flour as needed. Let raise till doubled, punch down, shape and let raise in 9x3 bread pan sprayed with cooking spray. Bake at 350 about 35 - 40 min. Cover the loaf with foil after the 1st 15 - 20 min.
 
For those without bread machines, I hope this works. I sort of mish moshed it from other non-bread machine recipes. Hey, I mish moshed. Or doesn't this count?

OMG...my two favorite things...almonds and cherries! Cooking experts, do you think I can substitute soy milk.

Just told DH we're getting a bread machine. And this looks fabulous - with or without one. I'm getting the ingredients and making it this weekend. Thanks for posting!
