Cheetah Runner Check In Sunday Oct. 1

Hey guys,
Well, I put my KPC/LG workout in my dvd player and the dang thing froze. So, I was too impatient to fix it so I hopped on the treadmill and did 6 miles at a pretty good pace. I think I just need to wipe off some smudges on the dvd.

That's it??? No big report??? OH no no, we need a full report, Ms. Laura!!!! ;-) Too bad it rained & was cold!!! Good job still though!
 
OK, so my *rest* day ended up w/ doing Legs & Glutes (standing part only). Hehehe I had some time this afternoon so I took advantage of it! ;-) Anyway, I really liked it & I'm sure I'll be feeling it tomorrow!!! Good news is, NO knee pain. I think I'll be ready to run on Tues!! WOOHOO!!!

As for the muffins, it's usually our tradition to have muffins on Sunday mornings. It's easy & quick to eat before church & the kids love them. I was begin quick this morning so I made the Martha White mixes- apple cinnamon & blueberry cheesecake. But I also had made homemade banana bread & pumpkin chip bread on Friday which was really yummy. :9

It was a beautiful day today. Greg's brother Brian & a guy from church, Jon, came over for lunch. Good thing I usually plan extras for Brian in case he comes to visit. ;-) It was an easy lunch day- tacos which everyone likes. Then they went outside to practice sighting in their bows for hunting on Saturday. Boys & their toys! ;-)

Hope you're all having a great day! I was checking in to see if the racers had posted their reports!! We need to live vicariously through you!!! ;-)
 
Oh my goodness! LAURA! Congratulations on your half! We need a report! Sorry about the rain and cold, though! But great job on doing it! But...details! We need details! ;-) My hat goes off to all you gals doing 1/2's, etc! I cannot wait until I can do one!

Jess, Hope the knee continues to feel better! Those "flavors" sound great!

Susan - My PLB did that to me once. It was a few yrs old at the time, and it had significant smudges on it. I cleaned it and it was good as new! Hope that is the case with yours! Good treadmill run!

OK, not *clean* but you can make it a bit healthier. My family LOVES this bread, once it hits fall time I make it a lot!

Perfect Pumpkin Chip Bread

1/2 c. butter
1 c. sugar
2 eggs (or 1/2 c. eggbeaters)
1 3/4 c. flour (I use whole wheat)
1 tsp. Baking soda
1 tsp. Cinnamon
1/2 tsp. Salt
1/2 tsp. Nutmeg
1/4 tsp. Ground ginger
1/4 tsp. Ground cloves
3/4 c. canned solid pumpkin
3/4 c. chocolate chips
3/4 c. chopped pecans (optional, I use about 1/2 c. walnuts instead)

Preheat oven to 350 degrees. Spray loaf pan w/ non-stick cooking spray. Cream butter & sugar w/ mixer. Blend in eggs. Beat well at low speed. In another bowl, stir together flour, baking soda, cinnamon, salt, nutmeg, ginger, and cloves. Add to creamed mixture alternately with pumpkin, beginning and ending with dry ingredients. Stir in chocolate chips & pecans. Bake for 60-70 minutes until done. Cool & slice. (you can also make this into mini-loaves or muffins, just decrease the baking time)

My dh loves this spread w/ cream cheese. You can use a cream cheese frosting on it also, but my kids just like it plain!

This looks soooo good!! I think I'll substitute applesauce, a little canola oil, and buttermilk for the butter (I've tried that before in a muffin recipe).

Btw, stupid question, but where do I find the canned pumpkin? The other day I was looking for it (I found an interesting recipe for oatmeal that has canned pumpkin and brown sugar, yum!) in the canned fruits/canned veggies aisle, but couldn't find it... Am I looking in the right section??

Yep, feel free to substitute! Let me know how it turns out!

The canned pumpkin (and make sure it's the solid pack pumpkin, not the pumpkin pie filling) in the baking goods aisle- usually w/ the raisins, cherry pie filling, graham cracker crusts, etc. But now once it hits the holidays it's usually really easy to find. I always buy Libby's because it's made in a town not too far from here, we went to the Pumpkin festival a couple weekends ago.
