Not Cathe here, but I believe stretching is something you can do everyday as long as you warm up your muscles beforehand. I have been told to never, ever stretch a cold muscle. So, if you're not coming off another workout, I would think that 5-10 minutes of moderate activity would warm your muscles enough to do some stretch max. In all Cathe's workouts, the initial stretching is done toward the end of the warm up, before she gets into the serious part of the workout. Then the warm, fatigued muscles are stretched out again at the end.
