Cardio/Calories/Burning Question

Hi Cathe,
It's me again :) Im just full of questions (that are hard to find answers for).
I was wondering about burning calories and fat.. what's the difference?

I know that any activity burns calories, but I've heard that you need at least 20 minutes before you start burning fat.. what is the benefit if you can only get say 10 minutes in? Do you not really burn any fat but just calories?

Also, the new monitors that say you can burn like 500 calories doing certain aerobics.. Ive sat on the eliptical (sp?) and other cardio machines for 30 minutes and it has said that i have burned around 200 calories. I don't understand how I can burn 500 doing aerobic steps and other classes but only 175-200 on the machines?

I always just figured (from the treadmills and other machines) that I would just burn aorund 150-200 calories for 20-25 minutes of cardio, but all these venues are now saying that 500 can be burned for spinning classes, step classes.. (and Ive even read a few posts here where members have mentioned burning that much in your step dvd's).

Can you please explain why there might be a jump? Perhaps it's older technology that doesn't record the calories burned properly? CAN you really burn 500 calories in 30 minutes of cardio?
