Can you recommend some vegetarian cookbooks

I just finished reading Eat to Live and found the information extremely intresting. My DD has wanting to try a vegetarian food plan for a while. So we're going to do his 6 week plan. I love varitey so I wanted to know if any of you had a vegetarian cookbook or a cookbook that has a lot of lowfat veggie recipes in it that you'd recommend.

Check out the New Moosewood Cookbook. It's an updated version of the classic vegetarian cookbook The Moosewood Cookbook by Mollie Katzen.
 
I read Eat to Live also and have been Vegetarian but mostly Vegan ever since. My most favorite cookbook is "The Vegan Planet" by Robin Robertson and has 400 recipes! Also a good site for info and even recipes is www.vegsource.com . I know this book isn't vegetarian but you could modify it...:)...Carole
 
I've been vegetarian since July and I have made some great recipes in The Vegetarian Family Cookbook by Nava Atlas.

And for special occasions or special every day treats, invest in the Greens Cookbook from the Greens restaurant out of San Fran.
Only veggie cook book I own. Oh, apart from Madhur Jaffrey's Indian or is it Eastern vegetarian cooking, which I have had for ages and have loved all the dishes I made from it.

I also have (and like :) !) the New Moosewood cookbook. I have another Moosewood coookbook called, "Moosewood Restaurant Cooks at Home". This was my first vegetarian cookbook. What I like about this book is that the recipes are designed to take 30-40 minutes to make. Included in each recipe is the total cooking time, and nutritional information per serving.

Mollie Katzen's cookbooks are a great intro to vegetarian cooking. Most of the ingredients can be found at a normal supermarket. Her anniversary Moosewood cookbook has a lot of low fat recipes.

Of the non-Katzen Moosewood cookbooks, I like the "Restaurant Classics". As someone mentioned, these cookbooks also include nutritional info for each recipe.

Someone also mentioned Deborah Madison's "Greens" cookbook. This would appeal to a true foodie willing to spend time in the kitchen. Madison's "Vegetarian Cooking for Everyone" is my favorite, but like "Greens", you may have to hunt for some ingredients & many of the recipes are time consuming.

"Eating Well" has a lot of vegetarian recipes with full nutrional info. It's a bi-monthly magazine.

I have a lot of vegetarian cookbooks, and I would recommend (as Debra mentioned) Vegetarian Cooking For Everyone by Deborah Madison. It is one of those cookbooks where everything is good, which is often not the case, IMO. It is not, however, a "quick meals" type of cookbook, but not all recipes are super time consuming. And it is a HUGE cookbook, so you get a lot of recipes for your money.
