Brown Rice Recipes needed

>First off, try the short grain brown. IMO, it is much
>tastier than the long grain. It's kinda nutty and chewey...
>delicious as a side dish, and good thrown into soups.

You can also get other varieties of brown rice (like Basmati and Texmati) that are a tasty change from regular long-grain brown rice.
(There's also a medium-grain brown rice that you might like).

>Quinoa and amaranth cook as quickly as couscous (which is
>wheat, not a particularly healthy grain, despite its rep).

I thought ww couscous was healthy! I think the regular couscous most stores sell isn't. My box of ww couscous says its ingredients are: Whole Durum Wheat Semolina. Nutrition Facts for 1/3 cup dry is 1g total fat, 7g fiber and 8g protein. I think that is pretty good.

Are you saying wheat isn't healthy?

Wheat is one of the most unhealthy grains. It's been so hybridized, and is used in so many foods, that many people are allergic to it. It is also a very acidifying grain (quinoa and amaranth, along with buckwheat and millet, are alkalizing grains), and an acid environment in the body promotes disease. Whole wheat couscous is certainly better than non-whole grain couscous, but there are better grains (actually, most of which are pseudograins, because they are actually seeds) than wheat.

Thanks for the info. I have been wanting to buy a cookbook called "Cooking with Grains" which lists some of the grains/seeds you talked about. I have tried quinoa and liked it. I just ordered the cookbook so am looking forward to all this new stuff to make!

I just started eating brown rice this week. I second Kathryn on the Basmati and Texmati! They are awesome! My DH and I actually fought over the brown rice leftovers for lunch and he actually made a second pot later in the week just so we would have some extra. We are converted! :)

>Where can I find Basmati and Texmati. Any suggestions?

Health food store. Coop. Even bigger grocery stores might carry it(though most wouldn't carry the 'brown' versions of it). Somewhere like Whole Foods would probably have it.

Whole Foods it will be! I am on my way to the shower after my workout and I will be finsihing up my weekly shopping/errands!!

Thanks for the speedy reply so I do not have to make two trips. I will let you know how I like it!!

If there is a Trader Joes near you, try their Brown Rice Medley, it is absolutely delicios. I use broth instead of water & I add some roasted vegetable to it or just eat it plain.
