Big Breakfast Cookie revisited

So, I like feeding my kids (and me) the big breakfast cookie and thought I'd decided to try to come up with some variations. So far, so good.

My favorite is this one: I ommit the cinnamon, add orange zest, about 1/2 tsp orange extract, the juice from the zested orange and cranberries in place of the raisins.

Or this might be my favorite: I add 1 scoop of chocolate protein powder, omit the same amount of the milk, add 1 T of cocoa powder. Sometimes I add the cinnamon and sometimes leave it out. I also increased the sweetener some.

And just one more. I add the zest of a lemmon, 2tsp lemon extract and ommit the cinnamon.

For the sweetener I have used Splenda but also stevia and date sugar.
 
Big Breakfast cookie? Can I have the recipe? I loooooove cookies in the morning (that's why I don't allow them in the house!):9
 
Been loving this breakfast cookie thing. I had already decided that for my next batch I was going to try craisins. Putting a little orange zest in with it is a great idea. Thanks!
 
It's late and I reaallly want a big breakfast cookie. I'm going to have to make those soon, very soon. Yummmmmy!
 
I've already made and eaten 2 triple sized batches. The second batch I added just a leetle peanut butter. Give me a little time and you won't even recognize these as being healthy.

These are good and I love these as a treat at work.

Okay, so I'm stuck at home all weekend without a car so I thought I'd play with this breakfast cookie recipe some. This afternoon I made a pumpkin oatmeal breakfast cookie. The basic recipe was the same but with the following substitutions:

Instead of applesauce I substituted 1 cup of canned pumpkin (this is the plain pumpkin not the pumpkin pie filling). Also added about a teaspoon of sweet n low brown sugar because the pumpkin isn't as naturally sweet as applesauce

Instead of the cinnamon I used pumpkin pie spice.

It needed about 1/4 cup of applesauce to loosen up the batter some as it was a little thick.

It needed to bake about 5 minutes more. As far as calories, pumpkin is about 20 calories less a cup than the unsweetened applesauce so it's about an even trade. The cookies came out big and puffy and if I don't get them in the freezer soon they will all be gone by sundown!
