The kids are occupied with friends right now. I've got all kinds of food going. I made a cabbage meatloaf again, steamed some carrots, and then baked a tray of Cauliflower Poppers. These cauliflower poppers are AWESOME and I eat them like popcorn! Simple, too. Here's the recipe:
Cauliflower Poppers
1 small head cauliflower
½ tsp ground cumin
½ tsp chili powder, or more to taste
½ tsp salt
½ tsp black pepper
1 spray cooking spray
*Preheat oven to 400° F.
*Cut cauliflower florets into grape-sized pieces (about 4 cups). Rinse and drain.
*Mix all spices in a small bowl.
*Mix cauliflower and spice mixture in a large bowl and toss to coat well.
*Coat baking sheet with cooking spray. Spread cauliflower on the sheet and bake until it’s tender, but not mushy, about 10 minutes (stir halfway thru cooking).
Yield: 8 servings, about ½ C per serving, 0 WW pts per serving

We're going to eat dinner soon, then head over to my parents' house to visit them and my Grandmother, who is 98 and lives right across the street from them. Basically, I'm trying to keep my kids awake till about 8:30pm...they're TIRED from their sleepover....found out both sets of kids were up till after 1:30AM!!!
