I've been experimenting with a recipe, and I think I finally got it right. It's a better choice for when you just have to have something. I live in Northern Utah, so it's fairly high altitude: You may have to adjust cooking time or temperature. Also, I used raw sugar--if you use another sweetener, you'll probably have to tweak a bit.
Oatmeal Cookies
1/2 C Smart Balance spread
1/2 C raw sugar or honey
1 egg
1 t vanilla
1/2 C milk
1 1/2 whole wheat flour (I use fresh ground)
1 t baking powder
1/4 t baking soda
1 t cinnamon (or to taste--I like more)
1/2 t nutmeg
1/4 t cloves
2 C oats or 6-grain cereal (I used 6-grain because that's what I had on hand)
1/2 C dark chocolate chips
1/2 C craisins
1. Cream spread and sugar or honey.
2. Add egg and vanilla.
3. Add dry ingredients and mix thoroughly.
4. Mix in chips and craisins.
Note: If you are in a hurry, or don't want to work too hard, you can dump in all the ingredients but the chips and craisins and mix thoroughly--then add the chips and craisins. If mixture is too dry, you may need to add more milk.
5. Spoon onto baking sheets sprayed with pam.
6. Bake at 350 deg. for 12 to 14 minutes (depending on cookie size).
These are very satisfying, and don't give me a headache or cravings like other treats do. I usually make them when I have to make other cookies for something--so I can have a treat, too. We call them "Legalized Cookies." My kids prefer regular cookies, of course, but like these because I'll let them take them in their lunches.
