Balanced Breakfast--what do you do?

I'm still searching for breakfast ideas--I want to eat a breakfast that will stick to my ribs, but not resemble a Grand Slam at Denny's, know whadda mean?

I'm sure the answer lies in balancing the carbs, protein, and fat, but I just haven't hit on it yet. Carbs are no mystery, but what in the world would be good for protein? I've tried cheese, eggs, milk, and protein powder, but have stopped short of doing sausage...

The trouble is, it seems no matter what I eat for breakfast, it doesn't fuel me properly. My blood sugar spikes and then drops, leaving me feeling sluggish.

The only times I feel like my breakfast DOESN'T burn off incredibly fast is when I stuff myself with fats (the Denny's breakfast).

Now I'm wondering about outside-the-box options: do any of you eat, say, CHICKEN with your breakfast?

What kinds of satisfying, nourishing, energizing breakfasts do YOU eat??? Enough carbs, enough protein, not too much fat...

(should I just see a nutritionist?)

Do you eat oatmeal? Try the slow-cooking kind (Oat groats or scottish oats) with some soy milk and flax meal sprinkled on and/or maybe some chopped nuts. I just read that oatmeal is one food that produces a high level of satiety ("full feeling"). Adding some fat and protein to it will help.
 
Yes, one of my regular breakfasts is oatmeal cooked in milk, with walnuts, a bit of butter, brown sugar, and blueberries.

It does seem to work the best for me out of everything I've tried. I just get tired of it!

I use Bob's Red Mill 5 Grain hot cereal w/flaxseed. It includes whole grain oats, wheat, rye, barley, triticale and flaxseed. I mix in a half scoop of soy protein powder and add a cup of blueberries/cherries and sweeten it with a little Stevia. It seems to be the right mix for me, as it balances out my blood sugar, and I don't get hungry before lunchtime.

I eat breakfast every day and it's usually cereal, oatmeal or the occasional ww toast with pb on it. The breakfast I eat always burns off fast partly because it's mostly carbs I guess, but even more so because I work out shortly thereafter. I am always eating again right after my work out (2-3 hours after having breakfast) so I don't worry too much about it personally....:)
 
Instead of oatmeal give barley a try. It has a lower glycemic index than oats, and quite frankly, it tastes better. Also, if you want to make multiple servings, it tastes better reheated than oatmeal. I use the quick barley for breakfast which cooks in less than half the time of the medium pearled but still contains the same amount of fiber and nutrients.

It's very hard to find hulled barley which is the most nutritious form, but medium pearled and quick are still great and probably better than oats. It also makes a great substitute for rice.

To prepare it, just follow the package instructions and then treat it the same as you would your oatmeal. I like mine with raisins, cinnamon, and banana.

I've used it instead of rice to make pilaf and I've also used it to make risotto and cold salads. It makes a great substitute for pasta in salads.
 
I think I want to start eating at Michele's. :) After breakfast we can make complicated but lovely crafts from the Barefoot Contessa. :7

Seriously, before I work out in the AM, I eat a bowl of Cheerios with a banana or a Kashi waffle with pb. (After much experimentation I find this gives me enough energy without feeling sick so I can work out within about 30 minutes of eating.) Afterwards I have two eggs with lf cheese and sometimes a ww tortilla. I'm like Wendy - my first meal is all about feuling the workout....

If I don't eat protein with every meal I get extremely hungry an hour later. Oatmeal itself is not enough. I'll usually have it with a hard boiled egg or a slice of wheat toast w/ natural peanut butter.
 
Hi Gisela,

If you think some chicken would help you feel more satisfied at breakfast, I say go for it! Lately, I've been really partial to smoked salmon and lowfat cream cheese on a whole grain bagel.
 
I have been eating turkey sandwiches on whole grain bread with cheese and a few veggies. This has really helped me not be hungry until lunch...and gets me through my morning workouts feeling great.

I've chopped up chicken and cooked it in my eggs. I would toss in some chicken, onions, mushrooms and make an omelet or just scramble it into my eggs. I'll also have half a grapefruit with this as well. It keeps me pretty full.

Another option is to make oatmeal and put in a scoop of vanilla protein powder (and some ground flaxseeds, too). Sometimes I'll have a piece of fruit, eggs, and a side of veggies for breakfast.

Every Sunday I make breakfast casserole to take with me to work throughout the week. It is very filling. I'm normally hungry about 4 hours after eating it.

BREAKFAST CASSEROLE
5 slices of lean ham, chopped
1/4 cup chopped green onions, or to taste
3 cups frozen shredded hashbrowns
1 1/2 cups fat free cottage cheese
1 3/4 cups reduced fat shredded cheddar cheese
2 cups of egg substitute

Mix all ingredients in a bowl. Spray a 9x11 pan with Pam and pour ingredients into the pan. Bake at 400 degrees for 1 hour.
Serves 6

Calories: 225
Fat: 6g
Protein: 28g
Carbs: 14g

Sausage is pretty high in fat and calories.;)
 
I eat a spinach omelette with havarti lite cheese, and 2 small kiwi fruit

or protein pancakes.....
1/2 cup lowfat cottage cheese
1/2 cup oatmeal
2 egg whites
capful of vanilla extract.
Blend in mixer and pour onto hot grill. cook one minute..flip over.

I take 1 cup of frozen strawberries, microwave them for 90seconds. Smash them up a bit, then pour them over for strawberry syrup!
Tastes exactly regular pancakes:)
 
Scrambled eggs with a touch of chili powder, onion, and red peppers (optional potatoes if you want), served with turkey bacon. wrapped in a whole wheat tortilla served with salsa... That was my "I'm starved" breakfast before I went vegetarian.
 
Natural peanut butter on hearty whole grain bread (real whole grain, not the 'lite' variety). For me it seems to be the right combo of carb, protein and fat that stays with me.

Kashi Go Lean with soy milk and a piece of fruit is another breakfast that's keeps me full until lunch.

I already knew that Michelle.;-) I thought there was some other compelling reason that I was not aware of. I just believe in everything in moderation. I eat 2 sausage patties for breakfast several times a week. I had a physical this past July and am perfectly healthy. Unless someone's planning to eat the whole package in one sitting, I don't see a cause for concern.

My old-fashioned oatmeal keeps me going for 4-5 hours per day. Sometimes I even forget about lunch until 2:30 in the afternoon!

Another oatmeal girl here too. But I add a lot of other stuff to it, right now my favorite thing is to add some whole cranberries (half a cup only has 30 cals & they're so good for you!) or blueberries, a couple chopped walnuts, and then after it's done cooking, I add in about 1/4 c. of cottage cheese. That way I get my carbs, protein, and a little bit of fat from the walnuts. It keeps me full a lot longer than a bowl of cereal. HTH!

Some mornings if I have time I'll make a veggie omelet (w/ eggbeaters & a ton of veggies) & have a Thomas's light English muffin (8g fiber!) w/ some PB.
