I found this recipe on Bodybuilding. Com and tweaked it a little - I have to admit they are the best I have made so far!
1 cup old fashion oats
6 egg whites
1 cup fat free cottage cheese
1 tsp. Vanilla
2 tbsp. Stevia
1/2 tsp. Cinnamon
In a good processor blend the oats until almost a powder. Add the cottage cheese, vanilla, cinnamon and stevia, to the food processor and blend. In a separate bowl, beat the egg whites until soft peaks. Fold half the oat mixture into egg whites. Once incorporated, add remaining oat mixture. Cook in a non stick skillet until brown on each side. Serve with syrup or berries - enjoy!!
