I got this recipe out of the American Cancer Society Cookbook several years ago. We love these muffins and they're a staple at my house in the fall. They're really moist and delicious.
Ingredients:
3/4 cup bran
3/4 cup whole wheat flour
3/4 cup granulated sugar
1 1/2 teaspoons cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup raisins **
1 cup canned cooked pumpkin
2 eggs (unbeaten)
1/4 cup vegetable oil
2/3 cup low-fat yogurt or buttermilk (I use plain yogurt)
** If desired, add 1/3 cup chopped walnuts and reduce the raisins to 1/2 cup
Directions:
Combine bran, flour, sugar, cinnamon, baking powder, baking soda, salt, and raisins; toss to mix. Add pumpkin, eggs, oil, and yogurt; stir just until combined.
Spoon batter into paper-lined or nonstick muffin tins. Bake in 400 degree F oven for 25 minutes or until firm to the touch. Makes 12 muffins.
