Any chicken breast variations???

Just wondering if anybody has any good chicken breast recipes. I think I saw one recently for chicken tornados...that sounds awesome. Anybody have the recipe??

One that our family really likes is to take the chicken, rub it with taco seasoning, pour salsa over it (I add black beans too...you could add other items to your taste.) and bake it until done. Very yummy!

I don't have a tornado recipe, but I get most of my recipes from www.allrecipes.com They have a ton or recipes submitted by different people and they are rated so you can weed out the crap. You can modify them to make them healthier. You should check it out!

I don't know or have the tornado recipe, but a friend of mine gave me this tasty marinade. I don't have the recipe right here, but if you're interested I'll post it for you. :9 The chicken was really good cut up in my salad.

My family loves chicken marinated in a mixture of Italian dressing, dijon mustard and apricot jam. Then grill or broil them. Yum.
 
Here you go:

1/4 cup olive oil
1/8 c balsamic vinegar
1/8 c lemon juice
1/8 c white wine
spices: paprika
oregano
garlic powder
salt
pepper

(For the spices, I didn't get an exact measurement, so I just sprinkled a few shakes of each. I'm sure you can add more or less depending on what you like.)

After mixing that and trimming the chicken, I poured it over the chicken, covered and place in the frig overnight. The next day dh cooked it on the grill. I know that my friend had used her broiler to cook it too. It was yummy!:9 My kids each ate two pieces of chicken! Ah, finally something other than chicken nuggets for them. ;-) It's also really good cold and cut up in salad. It makes a good lunch.

You know another thing I tried over the weekend was Trader Joe's Chicken cacciatore (sp?). I cut up 2 lbs of chicken and cooked that in a little olive oil, drained and added TJCC. Yum, yum. I served it over brown rice.

I made that for dinner tonight. I have to say it was one of the best low-fat meal I've ever had!! I slow baked it for an hour with black beans, onions, zucchini then when it about done, I added some low-fat mexican cheese. It was awesome. I think I might pick a milder salsa the next time as I don't think my DH would like it this spicy. I did make my own taco seasoning as the storebrought one makes me bloated the next day. I wanted to thank you for mentioning this!
