All the Single Ladies......

That don't cook for anyone but themselves on most days. How do you do it? What are some of your favorite meals that you like that you can store away? How much tupperware can a single gal possibly acquire? What tips have you learned? Do you make quick meals or do you whip out a cookbook (and your checkbook to get everything you need at the market....lol) I'm just curious as to how we all handle clean and healthy eating on a regular basis!

I've been making many a recipes for months out of the Tosca Reno book, and I never knew cooking could EVER be so enjoyable, even though I'm just cooking for me.

Hey Iris--I usually whip up a bunch of stuff on Sundays, & I cannot tell you how much tupperware a single girl can have b/c I'm still collecting. ;)

I usually chop up lettuce, tomatoes, onions, cheese cubes & cukes & store them separately. That way I can throw together lunch quickly & usually put some kind of protein in it. I also make either pot roast or a roasted chicken that I can eat for dinner during the week.

Also for dinners I'll often make a broiled meat & steamed veggies. I start the veggies & preheat the oven right when I get home, so by the time I've changed & gotten myself together I can just throw the meat in the oven. Broiling meat is so quick & easy! So I might make pork chops, steaks, less frequently fish, etc.

Oh, & I do actually on occasion make a meal that requires more than one ingredient. ;) I love stuffed peppers, I make them with salsa & throw some mozzarella on top the last 10 minutes of cooking. I'll make 4 which'll last me about 3 meals. And turkey meatloaf is one of my favorites.

Iris, I cook a lot and keep stuff on hand. It's just me and my boys and MOST of the time we're eating the same thing. However, THIS time of year, when I'm LOADED with fresh veggies from the farm, I make things my younger son doesn't normally eat.

ANYWAY...all that to say....

  • I cook a lot of soups, stews, goulashes, etc and then ladle them into single-serve containers. In the heat of the summer, I usually just reheat these to warm and eat them on the 'cooler' side.
  • When I pull the grill out to make dinner, I ALWAYS put on extra chicken breast, turkey burgers, foil pouches of fish, etc and keep them in containers, again single-serve.
  • I keep a TON of hard-cooked eggs in the fridge and pair with steamed fresh veggies (again, pre-steamed and stored).
  • For containers, I was starting to go CRAZY, then fell in love with this:
  • http://www.amazon.com/Smart-Spin-Storage-System/dp/B00078SO6M It's compact and everything is in its place in my cabinet.

I'm not single, but DH and I do try to eat clean even on busy weekdays. I like to roast a bunch of veggies in the oven (cauliflower, broccoli, eggplant, squash, onion . . . the sky is the limit) and then store the roasted veggies in the fridge. They stay good for a few days and are so versatile. They make great toppers to a green salad, taste delicious w/a warm grain like pasta or barley, and are perfect for soup (blitz in a blender with your favorite broth or even with tomato sauce or an undrained jar of diced tomatoes).

BTW, I now have the Beyonce song in my head b/c of the title to this thread!

Hi Ladies!! Thanks for all the ideas!

Laura- I'm still collecting tupperware too... I've never broiled........ In fact, I'm a "new" cook I guess you could say...still learning! I ask many questions and do a lot of trial and error. Some dishes have come out better than others....

Gayle- Yes we are better off! And I checked out the link to amazon...super cool! Thanks! I like it.

Lisa- I was thinking of that song while I was posting the thread....lol

I thought there were many more of us single gals..........but apparently not?

i am single. i eat alot of soups, stews, and chili. unfortunately i do not have room in my freezer so i end up eating the same meal almost every day. i mostly use my Fix-It and Forget-It Lightly slow cooker cookbook. at Target i buy frozen bags of chicken, shrimp, and brocoli. my qickest simplest meal is a wheat tortilla with stir fried veggies and a side of homemade spanish rice.i don't think i will ever find a frozen dinner i like.

wait, I am here, waving my hand as a single lady. (Well I have a picky 10 yr old DS so he does not count)

I will grill up a few chicken breasts and take them to work over the course of a few days, and reheat them along with a bag of steamfresh veggies.

If I make a roast, I usually share it with my folks that live across the street.

I have 3+ shelves of tupperware!
