Acorn Squash?

Ok, I love squash, I know how to make it really well with lots of buuter and brown sugar. BUT, there has to be a way to make it a little more healthy. Does anyone have any good tips on a great way to make it and have it healthy? I have sugar free syrup and thought that might help, but then I saw a recipe for it and it still required butter and brown suger with the sugar free syrup, sigh. So, help me out, please! I can't wait to make it, but just don't know how to healthy and tasty. Thank you for your help!

Butter and brown sugar are hard to beat. Have you ever just tried the squash on its own? I find a fresh squash, split and baked in the oven with a bit of water in the bottom of the dish, is very flavourful and sweet. I'm very happy to eat it as is. If you really don't like it plain, then try blending the cooked squash with some cooked and mashed carrots; cooked carrots are very sweet. Add raisins for even more sweetness.

A recipe I made a short bit ago was to cook the squash, as noted above, and when it was done, fill the holes in the middle with a combination of low-fat cottage cheese and crushed pineapple. I suppose you could just stir the crushed pineapple into the squash to sweeten it, too.

You can also turn the squash into a creamy soup by putting the cooked squash into the blender with as much plain soup broth as you like, to give it the consistency you like. Add some cumin to taste. Reheat on the stove, and when serving, sprinkle with parmesan cheese. This is a really nice savory soup.

Bake it then add a little salt, a little cinnamon and as little sweetener as you can tolerate. I eat them with just salt and cinnamon, and maybe a teenie bit of butter.
