About the Five Healthy Foods Thread...

It seems that a large number of folks here listed oatmeal & lentils as one of their top five favorite healthy foods. I happen to love both of these foods as well, and was wondering how you all prepare them? Thanks!

My mom had a great recipe for lentil soup which I lost, but I found one on the foodtv website that is very similar:

My favorite way to eat oatmeal is with butter, sugar, flour, raisins, and then baked like a cookie!! }(

For my favorite oatmeal, prepare it according to the directions on the box, but add 1/2 of a small apple, chopped, and let that cook with the oatmeal. When it's finished cooking, stir in a Tbsp of toasted, chopped walnuts or pecans, and cinnamon to taste.

I didn't list oatmeal (it would come in around 7th!), but I like it.
I like steel-cut oatmeal, which has more texture to it and doesn't get mushy (and somehow tastes a bit nuttier). I cook up about 4 servings at once (follow the package directions to cook for around 25-30 minutes), then put some of them in a bowl for later, and put the bowls in the fridge.

With the "just-made" stuff, I add soy milk, real maple syrup (not that "maple-flavored" crap), maybe some blueberries, and a tablespoon or so of ground flax.

The next day, I get one of the bowls of the already-made stuff (which is now just one big mass!), chop it up with a spoon, add soy milk, nuke it, then add my other ingredients.

Lentils only take about 15-20 minutes to cook, but I buy canned lentil soup.

We're having a stretch of cool weather so today I'm making a pot of my favorite lentil soup with cumin, lemon & spinach.

Deborah Madison has lots of great lentil recipes in "Vegetarian Cooking for Everyone". Braises, salads (tabouli like), & an awesome lentil minestroni. I make a lot of grain/legume salads in the summer. They make good wrap/pita fillings too.
