Ingredients
2 medium cucumbers
4 medium to large tomatoes
1 onion
3 TB rice vinegar
1 TB extra virgin olive oil
1 tsp honey
1/2 tsp onion salt
1/2 tsp pepper
2 TB fresh herbs (such as dill, parsley, tarragon, basil, chives), or 1 TB dried
Directions:
1. Thinly slice cucumber
2. Cut tomatoes into wedges or slices
3. Half the onion and slice thinly
4. wisk together vinegar, oil, salt, pepper, honey and herbs
5. Combine all and let stand for 30 minutes.
6. Toss again and serve.
I made this salad twice this week. I use baby cucumbers and parsley. Delicious!
