Peach Cobbler Gluten-free Muffins

Ingredients

1/4 cup coconut flour
2 eggs + 4 egg whites
dash of cinnamon
2 whole peaches chopped
1/4 cup full-fat greek yogurt (plain)
1/4 tsp of baking powder
1/8 tsp of baking soda
1 tsp vanilla extract
1 scoop vanilla protein powder (I use Jay Robb brand)
1 packet of french vanilla stevia or regular stevia
1/4 raw coconut crystals or coconut sugar (I love Coconut Secret brand)
Crumbly topping:
2 tbsp of coconut flour
2 tbsp of pb2
1 tbsp of sesame seeds
1/2 tsp guar gum or xantham gum (helps bind together)
1 tbsp of coconut nectar or maple syrup

Directions:

Preheat oven to 350.
Mix all muffin ingredients except peaches in blender or magic bullet.
Grease muffin tin and pour in mixture into each tin.
Add chopped peaches to each muffin.
Place in oven.
Meanwhile mix crumbly topping together and add tiny bit of water to make it crumbly without blending it into batter.
Spoon into each muffin tin and bake until toothpick comes out clean and muffins puff up! (Roughly 15 minutes). Enjoy 2 muffins as a serving!
