Taco Soup
3 FROZEN chicken breasts
1 packet ranch dressing mix
1 packet taco seasoning mix
1 medium onion, diced
1 can rotel tomatoes
1 can black beans
1 can canelli beans (I use any white beans)
1 can kidney beans
1 can vegetarian baked beans
1 can kernel corn
Put everything in crockpot in order listed. Do not drain or rinse beans. DO NOT STIR. Cook on low for 6 to 8 hours. Take chicken out and shred with two forks. Put chicken back in, stir, and eat.
The traditional 0 point soup is
2/3 cup sliced carrots
1/2 cup diced onion
2 garlic cloves minced
3 cups FF broth (chicken, beef or vegetable)
11/2 cups green cabbage
1/2 cup green beans
1 Tablespoon tomato paste (I find this a waste and don't use it, adding a can of diced tomatoes instead)
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 tsp salt
1/2 cup diced zucchini
I don't know if I would cook this in the crock pot though, it only takes about 15-20 minutes stove top and the green beans and zucchini would wilt.
In large saucepan sprayed with Pam, sautee carrots, onion and garlic over low heat until tender about 5 minutes. Add broth, cabbage, beans, tomato paste, and spices. Bring to a boil. Lower heat and simmer covered about 15 minutes. Stir in Zucchini and heat 3-4 minutes.
Another quick & tasty soup for 1 point (but not as clean)
2 -10oz bags frozen mixed vegetables
2-3 cans FF chicken broth
1 can rotel tomatoes
10 oz of Velveeta light
onion, mushrooms and other 0 point veggies are optional
Add veggies and broth to pot and bring to boil. Lower heat and simmer till veggies are soft. Add can of rotel tomatoes and velveeta. Stir till smooth.
Again... I think the cheese might break up on this one if made in the crock pot. It's quick and easy on the stove though.
