Yummy dinner last night...

I don't know if any of you have Max's around (looks like they're all CA, sorry east coasters!!) but they have HUGE meals and they're always pretty tasty. http://www.maxsworld.com/locations/menu/redwoodweb0705.pdf

I discovered my favorite, and made it for myself last night: it's a Joe's Potato.

Baked potato, stuffed with ground turkey, onions, mushrooms, spinach, and italian seasoning. YUM!!! I made 3 potatos and mashed them up with the turkey and veggies- I'll be eating this all week long! I used a lb ground turkey, 16 oz sliced mushrooms, an onion, and a bag of spinach. Also put in salt and pepper, and a ton of italian seasoning (I kept tasting and adding). Delish!!!

Seemed like the kind of meal some of you would enjoy as well, so I wanted to pass it along!

That does sound good. I had my own version yesterday with ground turkey, onions, tomatoes and I used a chipotle chile sauce. It was wonderful. I love spicy.

Amy, I loooooove MAx's diner. I live in Pleasanton and we have one in San Ramon California. I love the food there and the portions are huge as you know. My favorite there is Grandmas chicken and the Guys chicken salad. I am definitely going to have to go back soon.
