I wanted something different for a snack at work today so I took some chic peas and mixed salsa into them. I am eating it with a spoon right now and had to post about how YUMMY it is! I am using sweet salsa but I am sure regular salsa is just as tastey! Try it! :D
 
Oooh, sounds so good. I'll have to try it for lunch today--maybe over some greens. It's too bad I don't have any mango salsa right now--that would be fabulous.
 
I LOVE chick peas !
And I often will just throw together stuff like this.

I recently made a 'mash" (have no idea what to call it, thicker than a stew, but not 'pilaf' texture) out of sprouted chick peas*, sprouted quinoa (I bought this, but quinoa sprouts easily as well), dried organic mushrooms, cooked in water that I'd blended some yam, onion and garlic in), seasonings. Very yummy!

*I sprout them myself. Easy to do in winter, but because they heat up so much because of their size, it's harder to keep them cool enough and rinsed enough to avoid mold in the summer, though you can do it in the fridge. I also use food-grade hydrogen peroxide in the rinse water.

You can also roast them in the oven at 450 for about 25 - 30 minutes with some olive oil, garlic powder & parmesian cheese. They are good room temp or hot from the oven

I just picked up a can of organic garbanzos and a jar of pineapple salsa at the grocery store, so I'm ready to try this anytime the mood strikes! (I also started a new batch of garbanzo sprouts, but it takes 3-4 days for those to be ready).
