Hi everyone! I though I would share this recipe from the Rosie Daley, Andrew Weil book. Its fairly healthy and tastes delicious. It is quick to make and I've been having a good chunk of this cake as my daily treat. Its doing me no harm whatsoever. Everyone enjoys it - even kids. It has a lovely satisfying texture and is not very sweet. You could make some substitutions for a very healthy cake (it still tastes nice).
Apple Cake Squares
1 cup wholegrain pastry flour
1/4 tsp salt
3/4 tsp nutmeg
1 tsp baking soda
3 tbsp sugar (not a lot for a whole cake at all but you could sub with Splenda)
3 tbsp butter or spectrum canola spread (once again not a lot of fat for an entire cake but you could use apple sauce)
2 eggs (or eggbeaters)
2 cups finely diced red delicious apples (I leave the skin on for extra fiber)
Preheat over to 350 F. Mix the flour, salt, nutmeg, baking soda and cinnamon in a bowl and stir thoroughly. Cream butter and sugar in a bowl. Beat in the eggs and whisk till smooth. Stir in apples until they are distributed throughout. Slowly stir in dry ingredients and mix throughly into the batter. Spray the bottom and sides of a 9 inch square baking pan with PAM. Bake in oven for 45 mins.
