I made this this morning and for a high protein snack, it can't be beat:

Mocha Muffin

4 1/2 tbls Choc protein Powder
1/4 t baking soda
2 t Spenda ( optional), I used 1 packet
1 tsp coffee ( I used Instant decafe)
2 1/2 Tbls ground almonds
4 Tbls ground oatmeal
1/2 t unsweetened baking cocoa

Add 1/2 cup water and mix ( I used a blender). Microwave uncovered for about 2 minutes. Let cool

209 cal 19 carb 22 protein 5 fat

It takes a while to cool so if you want it for a certain time ( like an after dinner snack, make it and wait about 20 minutes to eat it.
 
That sounds yummy! Well, except for the coffee part;) For the ground oatmeal, do you just process it in the blender until it's powdered? What did you microwave it in? Some kind of little dish?

You could leave the coffee out ( it just gives it that "mocha" flavor.. I used a coffee grinder ( there I am with the coffee again!), and ground till it was powder. Some of the almonds stayed whole, but they added a litte crunch to it that I kinda liked. I put it in a high sided small glass bowl ( like an ice cream dish). When it comes out, it was a little liquid-ly, but when it cooled it became more solid. You can play with the time, and see if it makes it more cake like, with a few more seconds in the microwave. I may do that next time, but it was really good the way it came out

Now, for my question can I use instant oatmeal or steel cut oatmeal cooked of course.

I think you can use either type of oatmeal, but not cooked! just grind it dry and measure. I used Quaker Old Fashioned Oats.
