Some favorite clean foods:
Clean Chimichangas!

For a big family.
Boil 6 chicken breasts in veg. broth or chicken broth. Drain off broth (sometimes I save it for clean tortilla soup) Cut it up w/ a bread knife so that the chicken is kind of shredded. Chop and add: one small onion, 12 oz. fresh salsa, 1 tsp. cumin, 1 tsp. oregano, cilantro if desired. Cook in a saucepan over low heat until the water is cooked out and you have something that resembles taco filling.
Fill a whole wheat tortilla w/ the chicken mixture (add brown rice, small amount of cheese if desired or other veggies, like steamed bell peppers or black beans). Fold up the tortilla into a rectangle and spray with cooking spray and bake at 350 for 12 minutes or until tortilla is lightly crisp.
These are SO good and a favorite of even the non-clean eaters around our house.
I also make buckwheat pancakes w/ flax seed. Sometimes we have healthy waffle sandwiches filled w/ yogurt so that we avoid syrup. Anything looks good if you make it in a mickey mouse waffle iron.
Healthy spaghetti-
93% lean ground sirloin sauteed with finely chopped spinach, mushrooms and tomatoes so that the kids don't even know its in there. (I actually hide LOTS of veggies in spaghetti sauce. The volume of meat to veggies is about equal) I buy tomato sauce at whole foods and look for sauces with no sugar or other junk in there. Then I give them a small amount of whole wheat pasta with a large amount of meaty-veggie sauce.
I also buy veggie trays and fruit trays and I make them eat one serving of each. Raw veggies are actually quite easy on me and over time, they have all found some that they will eat fairly willingly.
I'm always trying to get them to eat better because it makes a huge difference for them in the way they behave.
