What's for lunch??

I only got done breakfast an hour ago, but I'm already planning for lunch. I'm not a big fan of cooking, but I eating out almost every day isn't working. I'm determined to start preparing my lunch more often! So what's for lunch, girls?

My plan for lunch is a bean burrito with some veggie nuggets. I'm not a vegetarian but I do enjoy eating chik nuggets. Also, on the bean burrito, I put on some cheddar cheese and Hidden Valley BBQ ranch on a whole wheat wrap. It's DELISH! I use El Paso fat free spicy refried beans. It's in a can.

I always have homecooked leftovers to make sure I save the $$$ (for Cathe workouts :)) and to eat healthy.

Today I am having spaghetti (no heavy sauce, just enouth to "color" the noodle) and 3 chicken nuggets with a cup of skim milk. I have not been drinking milk so I am now adding it at my lunch meal.

Oh, and 4-5 14 oz cups of water.

Blessings from our home to yours...Runathon

This strikes me as so funny! I take my hat off to all you ladies who are so organized you already know what you will be having for lunch!!! I can't plan my meals like that. After all, how do I know what I will feel like having later on? So, it will be whatever I can see that is tempting, and healthy, in my cupboards and fridge whenever I get the urge to eat, which, with kids at home again (school is out already!?!?!?!!?) and a stack of errands to run, could be anytime from now until 5pm!!!

I have fruit, yoghurt, salmon in a can, cucumber, tomatoes, bread: lunch wil be some kind of combo or a variety of these things eaten in dribs and drabs throughout the day.

Does anyone really eat "lunch" anymore anyway? I thought all the fitness mags told us to eat 5 or 6 small meals per day?!?!?!?! Personally, I am not much of a fan of the 3 meals per day lark, and just graze when I feel like it, but not less than an hour before a workout.

This wasn't much of an answer! Shutting up now.....

Well for me I don't look at food as breakfast, lunch & dinner & snacks in between. I eat 6 meals a day so by 1 its meal 3 already for me. At 1 today I'll eat 4 oz. of chicken grilled/string beans & corn/brown rice. I'm pretty disciplined & plan my meals for the week; cook up a lot of stuff on Sun. & package everything in Rubbermaids. Its quick & easy. Kathy:D

I'm like Clare and Kathy, except I probably don't stop at 6 meals. I just snack a lot. But at work my time is regimented so I have limited opportunities to eat there. There is an official lunch time so I'll have a roast beef sandwich I make or a Lean Cuisine type dish, and maybe a Yoplait Whip for dessert.

I keep 2% cottage cheese in the fridge at work and at home, Breton whole wheat crackers, a jar of peanut butter, Lean Cuisine things, Alvarado Street bread (very heavy whole grain bread) and sometimes even fruits and vegetables. My fruit and veg skills are lacking.

:p

Clare,
With this semester's teaching schedule, I don't really have any "lunch," but like you, I graze throughout the day. My closest-to-lunchtime grazing for today will probably be some raw veggies (peas, red/yellow/orange peppers) and some hickory-smoked soy jerkey.

Lunch for me was rocket, watercress and spinach leaves, red and yellow peppers, cucumber, mozzerella, salad onions, mushrooms, santa tomatoes, chicken roasted in sun dried tomatoes and an olive oil dressing. Dinner will probably just be pizza!

Clare...

Those who fail to plan, plan to fail!!!!

I know every day by 7:30 AM what I will be eating for lunch. And it DOES NOT MATTER what I feel like. It just IS. I take leftovers from the previous nights dinner or what not...sometimes just a yogurt protein shake. BUT, I always pay close attention that I have a carb, a protein and a fat. That is the most important. Now, dinner....well, that is another story. My planning gets worse and worse as the day goes on. My diet is awesome 8-5.:) I guess that would be true of most people. '

I can't imagine planning my food out though. I even have BACKUP food at work, just in case. I will NEVER be left without food. Needless to say, in the three years I have been at my current job, I have hit the snack machine maybe 10 times. I am always in awe of those that are there everyday!!!! I always wonder why they just don't buy their own food! It is weird how we are all so different!

And, for lunch today, I had a red pepper, two light string cheeses and 8 almonds!!:) For breakfast I had a light non fat yogurt with cottage cheese mixed in and for mid morning meal I had a bowl of Corn Bran with fat free milk and a shot of OJ to help me absorb the iron in the cereal. Told ya it was scientific!!:)
