I also didn't cook last night. DH wanted pizza, so we went out. I had half a chicken cheese steak, with chips and a side salad.

Tonight I made pasta with sauce, veggies and a bit of cheese baked in the oven.

Tonight I made a roast beef with a demi glaze sauce plus I had a baked sweet potatoe (DH & DD has white baked potatoes) with steamed peapods and a salad. Dessert was an oreo with 1 tspn of PB - YUMMMMMM.

I think this is a great thread to keep going, as we can just keep getting new ideas. Tonight I put together veggie jambalaya for the crock pot for tomorrow's dinner. So far most of my vegetarian meals have turned out like crap, but DH, bless his heart, isn't giving up on me yet. Cross your fingers for tomorrow night! I'll report back.
