what about veggies?

i eat alot of grains,beans, fruit but it makes it hard to fit in veggies. for example i eat black beans,brown rice,and a salad. but i am not getting my 3-4servings of veggies. any suggestions?

So far, I've figured out 2 ways to incorporate veggies into my diet (where as before, I was eating next to none).

1) I roast them in the oven, sprinkled with a little olive oil, salt, and pepper. I just buy whatever ~ peppers, squash, tomatoes, stuff I've never heard off ~ and bake them at 350 for about 20 minutes. They're pretty good that way, and they go with any meal as a side.

2) I cut up tomatoes, peppers, cucumbers, etc. and throw them into my spinach salad. I sneak spinach into my Caprese Salad too.

I just worked spinach into my Chicken Pot Pie, but the rest of the recipe is far from clean :rolleyes: , so I don't count that one for me specifically. But I sneak spinach into the rest of my family. Ha!

i snack on veggies alot. my favorite is baby carrots(if i am real daring i will measure out some peanut butter for a dip) and sliced cucumbers with a sprinkle of sea salt. they are salty and crunchy and curves my cravings of chips plus i am getting my veggies in :). i make sure lunch and dinner i have veggies on the plate at least 1 cup. i am not super adventurous with my selection. i stick with basics like salads(romaine,red leaf,green leaf and baby spinches are the bases),carrots, cherry tomatoes(even though they are hella expensive right now), cucumbers, broccoli,califlower, peas, occasional ear of corn, and onions.

Dip your veggies in yummus :p put them in a whole wheat or ezekiel pita or wrap with yummus...make yourself a big ol' pot of soup such as minestrone, make yourself something pasta florentine...tomato sauce....veggies in your pasta....stews.....one dish meals.....

Well, you could easily get 3-4 servings (which I think is minimal) per day through two big salads.

Forget the iceberg lettuce and pale, tasteless tomatoes. Think of a variety of colors and tastes when making salads: dark green lettuces (Romaine is my favorite), red pepper, avocado (botanically a fruit, but who's keeping track!), fresh tomatoes, red cabbage, artichoke hearts, cucumber.... You could make a different mixture every day of the week, if you wanted.

Snack on veggie sticks dipped in hummus or a homemade bean dip, or salsa.

Throw handfulls of veggies in soups, pasta sauces, etc.

Steam some veggies and throw them on top of your brown rice, or mix them with your beans. (Most people eat too many grains and not enough veggies, IMO. Try reducing the portion size of your rice, and adding more veggies.)

Why not add a side of veggies with your rice and beans? You can have smaller portions of those and also a veg. I also add veggies to rice, quinoa etc---chopped red peppers, shitake mushrooms, peas, etc. Whatever you like. See what is in season in your area and just add them to any meal--veg omelets are delicious.
