i eat alot of grains,beans, fruit but it makes it hard to fit in veggies. for example i eat black beans,brown rice,and a salad. but i am not getting my 3-4servings of veggies. any suggestions?
Well, you could easily get 3-4 servings (which I think is minimal) per day through two big salads.
Forget the iceberg lettuce and pale, tasteless tomatoes. Think of a variety of colors and tastes when making salads: dark green lettuces (Romaine is my favorite), red pepper, avocado (botanically a fruit, but who's keeping track!), fresh tomatoes, red cabbage, artichoke hearts, cucumber.... You could make a different mixture every day of the week, if you wanted.
Snack on veggie sticks dipped in hummus or a homemade bean dip, or salsa.
Throw handfulls of veggies in soups, pasta sauces, etc.
Steam some veggies and throw them on top of your brown rice, or mix them with your beans. (Most people eat too many grains and not enough veggies, IMO. Try reducing the portion size of your rice, and adding more veggies.)
