Nasty as in bad tasting? Well, most vanilla extract contains alcohol, and if you use it in uncooked food, it won't burn off, so you may taste it. You could also look for vanilla powder, which is just the dried, powdered vanilla bean (though how it ends up white, I don't know, because vanilla beans are brown?). You could also take a vanilla bean and grind it in a coffee mill or food processor (I just saw a raw carrot/cocoanut cake recipe that uses this).
