What a disappointing lunch substitution

Might I suggest a Luna bar? I know they're not clean eating, but I eat them anyway as a mid-afternoon snack. The toasted nuts and cranberries one is low in fat and is packed with vitamins and minerals. They are yummy delicious, crunchy and go great with coffee. A real treat that isn't so empty.

I think I may have found a substitution that fits my need for something crunchy and not full of empty calories. I bought a box of Tiger Power cereal for my daughter yesterday. It's Kellogg's new healthier kids cereal. It's relatively low in sugar and fat, and is made with whole wheat and has a suprising amount of protein in it (8g for 1 cp). I threw half a cup in a sandwich bag this morning, so we'll see how that works. Only 55 calories for half a cup, plus 4g protein and some extra fiber.

I'm gonna go back to the whole chocolate issue here... I think yall covered the healthy snacks nicely :) So for a chocolate fix for those that try to eat cleanly, instead of instant hot chocolate (lots of weird stuff in there!) i make my own hot chocolate.

2 T organic cocoa
3-4 T sugar depending on your taste
2 c. skim milk

makes 2 servings

heat it all in a pan on the stove, and its soooo yummy! And even though it has sugar in it, its better than the chemicals in instant hot chocolate!

ok i'm done... i think i'll go make some now! :9

Using agave nectar or maple syrup (with a dash of natural vanilla as well) could make this cocoa just as tasty without the sugar.

Speaking of vanilla...I was thinking about adding vanilla to my plain yogurt. Would it be totally nasty to add vanilla extract? The vanilla flavored yogurt at the store has a lot more sugar.

Nasty as in bad tasting? Well, most vanilla extract contains alcohol, and if you use it in uncooked food, it won't burn off, so you may taste it. You could also look for vanilla powder, which is just the dried, powdered vanilla bean (though how it ends up white, I don't know, because vanilla beans are brown?). You could also take a vanilla bean and grind it in a coffee mill or food processor (I just saw a raw carrot/cocoanut cake recipe that uses this).

I'm going back to your oreo crisps idea. I say eat them. It is better than eating 9 oreos with a large glass of milk that I ate last night. I try so hard to eat cleanly and healthily, sometimes I need the real thing. Also, I like to eat and I LOVE TO EAT JUNK. I guess my theory for me is, if I eat good most of the time, it is better than eating garbage all of the time. The autumn wheat cereal in the organic isle is pretty good to munch on too. Melissa
