Hum, I think you could use GS with dumbbells only. The only problem I forsee is on some of the lower body workouts she goes up to 40 lbs. for squats, but, I suppose if you had 20 lbs. dumbbells you could just put a 20 on either shoulder and go. GS C&T doesn't use the barbell much and neither does BSB. I think you could adapt.
