Turkey Pot Pie - speaking of pies!

My friend gave me a HUGE turkey for Thanksgiving this year & I am going to have a ton left over. I thought it might be nice to make a turkey pot pie. Does anyone have a good recipe? I was thinking that I might take the easy way out and use Phillo Dough for the crust - is this a good idea?

Also, can I prepare these and then freeze them for future use?

Phillo dough makes a wonderful crust. I make round or leaf shapes with a cookie cutter to gussy it up--looks beautiful!
