travel "pancake" question for you bffmers

I am so bad at portions, etc and I can't tell how many this recipe in BFFM is supposed to make. Any of you ever tried it? TIA!

Mix the following ingredients in a bowl until it makes a pancake batter-like consistency: ¾ cup of oatmeal, 1 whole egg, 3-4 egg whites, 1 scoop of vanilla praline protein powder, half a chopped apple, a dash of cinnamon and two packets of equal(optional) Pour the mixture into a fry pan and cook on medium until one side is lightly browned. Flip it over until the other side is done. Presto! Eat it hot, or wrap it in foil and take it with you for a super-convenient travel meal.

My understanding is that is one serving.... I havent tried it yet as I have just finally finished the book.... :)

These are so good. You can save on calories and work by just doing oatmeal, egg whites or beaters, protein powder, cinnamin. That version is 400 calories, very low fat, excellent protein and very "packable".

I made a ton of applesauce last weekend so I thought I'd toss some of that in instead of an apple. It's just apples and cinnamon nothing else.

Thanks for your review! I'm going to make a few of the pancakes, then, and have them all week. I just hope I have enough oatmeal in the house! ;)

I frequently make the version Sarah has mentioned (without the apples). It is less apt to break apart and easier to eat during "travel" ....plus most of the time I am not "into the sweetness" the apples offer. On other days, I just make the pancakes with 1/2 the amount of protein or none at all and the eggs. I find it so easy to get the amount of protein I need during the day without really needing to add it to the pancakes.

This recipe makes one big, fat pancake. Too much for me to eat for breakfast, so I will eat about half and pack the rest for a snack. I am going to experiment with making it smaller as well. I like Sarah's suggestion. But, it is yummy!!:)
