I've never tried this recipe from her book, but perhaps she means the single serving indicated on the nutrition label of the soup mix. I hope this helps and let me know how this recipe turns out.
There is a box of single serving dry soup mixes that you can buy at the store. I think they are sold in a box of 4, by Lipton or Knorr. Look for "Cup of Soup" Mix.
Sorry I just now got back to the forums. Niecebug is right. Knorr carries a "Vegetable Soup, Dip and Recipe Mix" and it's quite good, except I've only seen the single envelope(4 servings) per box where I shop. Good Luck!
Sorry, I was off the boards this weekend. I used the Knorr. The sodium content is a bit high but it makes an entire meatloaf. Let us know what you think about the recipe.
I decided to make the roasted red potatoes with chicken recipe tonight-It was very good! My dh even ate it and he is very picky!
I just got back from the grocery store and got some of the veggie dry soup mix...I'll let you guys know how the turkey meatloaf turns out tommorrow when I make it!
