tofu recipes?

For those who prepare their own tofu, what's your favorite method? I find that I've gotten into a rut and have been buying pre-made (cooked) tofu for awhile now. When I try to prepare it myself I always end up frying it. Does anyone have any healthier alternatives? Anyone tried baking it?

I marinade it in either Italian salad dressing or barbeque sauce and grill it.

Also, I cube it and fry it in a little bit of butter and honey or I saute some chopped onion, then I crumble the tofu in the pan with some garlic powder.

I almost always bake mine (b/c it's so easy!). I use my convection oven (easiest), but you could use a toaster over (easier), or conventional oven (easy). I press the water out of a slice (I cut mine into 5 even sections), then slice each slice in half the long way, then spread it with some Bragg's Liquid Aminos (you could use soy sauce), and agave nectar, then sprinkle with any variety of spice mix I want. Asian, Italian, Mexican, etc, and bake until done. Takes about 13 min. in the convection and you don't have to turn it. You do with the other two methods. You can make extra and then toss it into salads, wraps, pasta dishes, etc. later.

I've made nuggets using nutritional yeast and some seasonings. I cut the tofu into strips and batter. I use cooking spray, put them on a nonstick cookie sheet and pop them in the oven.
 
I like to make tofu 'mock egg salad" (the Peta cookbook has a recipe).

I also like to cube it (the water packed stuff, NOT the asceptically-packaged stuff, which is best for puddings and dips and other 'blended' texture foods) and stir-'fry' it (in some mirin or cooking sherry) with veggies.

Also, crumbling it and adding some seasoning (including nutritional yeast and some turmeric) then adding it to some sautéd onions and veggies makes a good scramble (or if you mash it onto the veggies and let it cook a bit, more of a 'frittata').
 
I have never had a tofu recipe that I have liked. I've tried the egg salad and had it sauteed with ginger and just never could like it. I'd love to try something I would like.

I made a tofu lasagne based on a recipe from the AllRecipe site that was delicious! Of course, lasagne is not an everyday food :)

I usually have tofu every day or every other day. I am really lucky to have a local company in town that makes flavoured organic tofu that is so YUMMY! (I never used to like tofu.) My favourite is their Hot Tofu - I just fry mine in a SMALL bit of oil then add whatever seasoning/sauce I am in the mood for. (I particulary like President's Choice Memories of Szechwan Spicy Peanut Satay Sauce.) I'll often add bunch of spinach or coleslaw mix and saute that with it and serve it over brown rice....mmmmm.

This is nowhere near clean, but a yummy dessert is 10 oz. soft or silken tofu, mix with 6-8 oz. chocolate chips, melted. I mix it all up in the food processor and at least I'm getting a little protein and soy with my chocolate LOL. Sometimes I add a tsp. of vanilla too. It's really delicious - a thick consistency like chocolate mousse.
 
RE: Nutritional yeast?

I found some nutritional yeast in the organic section of Kroger. I ordered some from Swanson's vitamins but haven't tried it yet.
