Sweet Potato Salad Recipe

This is a great take on potato salad - very fresh and summery tasting . . . and we all know what a nutrient dense food sweet potatoes are!

Makes 6 Servings

3 large sweet potatoes
1 bunch scallions trimmed and thinly sliced
2 celery stalks, chopped
1/4 cup minced fresh parsley (I also added some fresh dill)
1/3 cup reduced fat mayo (I used fat free here)
1/4 cup nonfat buttermilk (I used skim milk)
2 tablespoons fresh lemon juice
2 teaspoons Dijon mustard
salt and pepper to taste

Cut sweet potatoes into bite-size chunks. Steam for 10 minutes or until fork tender. Let cool. Add scallions, celery, parsley and toss with potato chunks. In a separate bowl, whisk together mayo, milk, mustard and lemon juice. Pour over potato mixture and gently toss. Season with salt and pepper to taste.

Serving size is 1 cup

Hi, Thanks for posting this one.. I saw it in a magazine but really like to hear from someone that tried it first.. one question, maybe silly but did you peel the potatoes first or leave the skins on?
 
Scrubbed the skins clean but left them on . . . yeah, got this one out of Shape magazine. Like I said, it was fabulous.
