Sweet Potato Bake

I posted this to another thread but just in case some of you missed it I thought I would put it in its own thread!!! Hope you like it!!!


Sweet Potato Bake

3 cups cold mashed sweet potatoes (prepared without milk or
butter)
1 cup sugar
1/2 cup milk
1/4 cup butter or margarine, softened
3 eggs
1 teaspoon salt
1 teaspoon vanilla extract

TOPPING:
1/2 cup packed brown sugar
1/2 cup chopped pecans
1/4 cup all-purpose flour
2 tablespoons cold butter or margarine

In a mixing bowl, beat sweet potatoes, sugar, milk, butter, eggs, salt and vanilla until smooth. Transfer to a greased 2-quart baking dish. In a small bowl, combine brown sugar, pecans and flour; cut in butter until crumbly. Sprinkle over potato mixture. Bake, uncovered, at 325 degrees for 45-50 minutes or until golden brown
Yield: 8-10 servings

And having made this recipe just this week, let me testify to its absolute "yummy-ness!" You may never eat sweet potatoes another way, I know I wont!
Great recipe Kelly, I've already passed it on to a good friend who loves cooking and trying out "interesting looking" recipes.

I have the same recipe w/ a slight variation for the topping ..
Mine is: l cup crushed corn flakes; l/4 cup brown sugar; l/2 cup pecans; l/2 stick of melted butter... Its sooo good. I make it for Thanksgiving and Christmas. Yummy!!
 
I make the same recipe and have for years & years! It was my Mom's recipe. I use walnuts instead of pecans and I DOUBLE the topping! :9 My Dad never liked sweet potatoes, but he LOVED this recipe. (MISS him bunches! :-()Also, sweet potatoes or yams out of a can work well too.
