A short departure from talk about lemon desserts ... haha
Last night I made these: BROWN SUGAR COOKIES
Three words: to die for! I'm serious that these are my new favorite cookies EVER!
BROWN SUGAR COOKIES
1 cup butter, softened
3/4 cup sugar, divided
1/2 cup packed dark brown sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup finely ground pecans
1 teaspoon salt
1/2 teaspoon baking soda
Icing:
1 cup packed dark brown sugar
1/2 cup half-and-half cream
1 cup confectioners' sugar
1. In a large mixing bowl, cream the butter, 1/2 cup sugar and dark brown sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, pecans, salt and baking soda, gradually add to creamed mixture and mix well. Cover and refrigerate for 20 mins or until easy to handle.
2. Shape into 1-inch balls; roll in remaining sugar. Place 2-inches apart on ungreased baking sheets. Flatten with a glass dipped in sugar. Bake at 350 degrees for 10-12 mins or until edges are lightly browned. Remove to wire racks to cool completely.
3. For icing, combine dark brown sugar and cream in a saucepan. Bring to a boil; boil and stir for 4 mins. Remove from the heat. Sift the confectioners' sugar into the hot mixture; stir until combined. Drizzle over cookies.
* For the ground pecans I used sliced pecans I already had on hand and then I put them in my mini food processor and ground them up until they were as fine as they could get. I'm not sure if you can buy ground up pecans at the grocery store. But what I did ended up working well.
* You need to buy "DARK" brown sugar for these. Not regular brown sugar.
