Shrimp pesto sauce

OK I'm not much of a cook....(actually I'm terrible at it & consider my ideal house one in which there's no kitchen :+ ), but I had this at a country club the other day (no, I'm not a member, I had a meeting & boy are meetings at country clubs awesome!) & had this really delicious shrimp. Great for low carb eaters--not so sure about calories, but I asked the manager for the sauce recipe & she emailed it to me--seems pretty simple altho I'm sure I'll find a way to screw it up:

sun dried tomato pesto

1 cup oil packed sun dried tomatoes
half cup grated Romano cheese or parmesan
1/4 cup fresh basil leaves
2 tablespoons pine nuts toasted
3 garlic cloves
3/4 cup olive oil
1 tablespoon granulated sugar
1 tablespoon balsamic vinegar
place all ingredients in food processor and puree until smooth
 
It sounds yummy....and since there's no pots or pans involved, Laura, it's "technically" not cooking!;-)
 
This looks good, definitely worth a try. I've made a lot of traditional basil pesto, but never with the sun dried tomatoes or Balsamic vinegar.

Gotta wine pairing to go with it? :+
 
LOL don't get me started on wine--I drink white zin & all my friends tease me about it.

Although I also like reisling, which might go pretty well with this.......hmmm......:9
