i am starting to see changes in the short time i have worked for the city school nutrtition program. i, as well as others, have little say in the food served but at least the state is getting more invovled.
this year they told our schools that they have to served wheat/whole grain breads. they are going with nature's own wheat double fiber buns. they are pretty good, and the kids are still eating up their chicken sandwiches like they are going out of style LOL!!! but yet our director is whining its expensive. honestly in the past few years i have seen prices comparable to the white bread options and most brands of wheat breads(the ones without enriched flour). maybe a dollar or a few cents more but certaintly not a bank breaker.
also, i am the "salad lady" in the mornings. i prepare all side and chef salads for the two lunches we have a day. we have upped from 60 side salads to 80 side salads EVERYDAY!!!! its a mix of the iceberg lettuce with romaine,carrots, and red cabbage mix. for the side salads i add cherry tomatoes and cucumbers. the large chef salads have sliced carrots,cucumbers,tomatoes,fresh broccoli, green peppers, and 2 oz EACH of ham and turkey. i went from 20 to 25 chef salads a day.
this year elementary and middle schools can NO longer use the fryers for french fries. all fries,potato puffs,etc must be baked. our high schools can only fry once a week, and i believe we are doing that on fridays.
i see the kids getting pizza less and less. they CLAIM the pizza is good b/c of the grains but i am still not falling for it. you offer plain cheese or pepperoni. i love pepperoni but i also know salt,fat,and calorie count for pepperoni. nothing healthy there at all LOL!!!
we are using frozen veggies not canned. yesterday we had broccoli and these kids lit up like christmas morning. they love the broccoli!!i think today we are doing peas and carrots, they are coming around with thoses.they will fight over the last fresh banana or apple LOL!!! and we have also started offereing fresh sliced orange slices. lots of to prep but we have some hard workers in our kitchen that seem to get it done.
the main directors are complaining but i don't see a big price difference with these things as opposed to pulling it out of a box or can.and we are seeing more and more opting for school lunches whether they get free lunch or have to pay full price, our numbers are going up. i think downtown should be proud and quit complaining of the new rules the state is putting on school lunches!! the kids are choosing the new foods and seem to enjoy the new wheat buns. i haven't had a one complaint about the new changes,well except they can't get two potatoes(ie they can't french fries and mashed/baked potatoes they have to get a fruit or veggie if they choose a frie as one of their sides)
okay done, i have to go make the salads and ring up the lunches.enjoy your day!!
