Im only just getting to read my Oxygen magazine that I bought about a month ago, and I found a couple of nice recipes. Some may already have it.
Tropical Salad with Strawberry Balsamic Dressing
10 oz bag of spinach
1 can mandarin oranges (or a orange cut up)
1 cup slices strawberries
1 papaya sliced (if not available use anothe cup of strawberries)
2 kiwis, peeled and sliced
2 hard boiled eggs,thinly sliced
1/4 cup freash shredded parmesan
Dressing:
1 cup sliced strawberries
2 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
2 tsp sugar or sugar subctitute
Fresly ground black pepper to taste
Divide the spinach evenly onto 4 plates.Alternating fruit and egg slices,top evenly with orange segments,strawberry slices,papaya,kiwi and egg slices.Add parmesan on top.
For dressing, combine ingredients in a food processor and mix until smooth.
Nutrients:
Cals:280,Fat 12g, Protein 9g
This one sounds o.k to, its really for kids though,
Fruit and Marshmellow Salad
6 servings
4 cups packaged coleslaw mix, 1/2 cup chopped dried apricots,1 granny smith apple, cored and chopped,1/2 cup red grapes,1 cup minature marshmellows, 1 1/4 cup vanilla yogurt.
Combine coleslaw mix,apricots,apple,grapes,and marshmellows in a bowl, toss and mix.Pour yogurt overtop and mix.Cover and refrigerate for one hour before serving.
Cals: 111, Fat: 0.2 g, Protein 3g
Sounds o.k and it may be nice if you have bit of a sweet tooth.
