Roasted Veggies - a great side or snack!

My husbands new favorite side dish is my roasted veggies - you can use virtually any favorite veggie and even experiment with new ones.
I take the following veggies, slice them up and toss them in a mixing bowl with a little olive oil and Mrs. Dash or Bragg's All-purpose seasoning and toss to coat then lay them out on a foiled lined pan in an oven set to 425 for 30-35 min or until golden brown and roasted through....so good!
Onions
Cauliflower
Brocolli
Parsnips
Carrots
Zucchini and/or yellow squash (also butternut squash is awesome)
red, yellow, orange, or green peppers

You can use much more than this, and also add sliced potatos to it, sweet or red, or white!
Makes a great side dish or snack!

Jodelle, I love roasted veggies. Add garlic in there too! Talk about YUMMY!

I like to make a SOUP out of the roasted veggies. After roasting them, I will put them in a big soup pot and add veggie broth and boil for about 15 minutes. Then puree in a blender of food processor for a yummy smooth soup!
