Recipes for kids....

My oldest DS is a very picky eater and my youngest is starting to follow in his footsteps. Does anyone out there have any food ideas or great recipes that their kids just absolutely love? I am really trying to be a good example, but they say that everything I eat is gross or disgusting, like vegetables, fruit, tofu, you know, the healthy stuff . I would absolutely love any help here.

I make a healthier mac and cheese that my kids love. Only one of mine is picky and she likes this:

2 cups pasta cooked(I use the penne's with higher fiber and protein)
2 cups cheddar cheese
8 oz. sour cream
8 oz. cottage cheese
1/2 cup milk
1 egg
Ritz crackers
butter spray

Mix the first 6 ingredients together, top with crumbled Ritz crackers, and spray with butter spray. Bake in over at 350 degrees for 45 minutes (I bake first half an hour covered, then uncover the last - keep's it moister.

If you use low fat (I hate fat free) instead of regular, it's leaner.


I also find tacos - with either plain chicken, beef or beef crumbles (vegetarian) where the kids can build their own (put tomatoes, lettuce whatever on them) very kid friendly.
 
Hmmmm...not much. Let's see, apples, carrots, chicken nuggets, sometimes steak, hot dogs, cereal, cereal, cereal, pasta plain and ground meat with the taco mix. Really healthy huh? Did I mention cereal???:7

Well, on the bright side they like apples and carrots :) Do they like any kind of sauces or condiments on to dip the nuggets, pour over the steak or hot dogs?
My mom used to "hide" fruit and veggies in almost everything that we ate. She would steam and puree veggies and hide them in pasta sauces (not necessarily red sauces as I see your kids are into plain pasta), salad dressings, ketch-up, homemade pasta itself, mac and cheese, breads, pizza crusts, muffins---you name it, lol.

You could try this with the ground meat, very finely chopped zucchini, ground bean paste, tomato paste or mushrooms would probably blend right in. Start with a small amount and then get a little more daring. Also, if you can get the meat in a ww tortilla wrap maybe you could sneak in even more.

I really like Christine's recipe b/c it's easier to hide things in baked pasta dishes.

Also, sugar snap peas are VERY sweet (more so than carrots) and you might be able to get a few down them.

When my brother and I were little we'd eat frozen peas (still frozen), but not defrosted. And other frozen fruit, blueberries, grapes, cherries, etc. make a nice treat, especially if you give a flavored yogurt dip. I've gotten quite a few of my younger cousins to down quite a bit of fruit this way :7

I just received Jennifer McCann's book "Vegan Lunchbox" today and it has wonderful healthy food ideas for kids. I am so sure you and your children would absolutely love some of the recipes she shares....and I know they will never miss the B-O-L-O-G-N-A. ;-)
