Here's the recipe for anyone who asked about it. Clean or not clean? You be the judge!
RED LENTIL PATTIES WITH CILANTRO SAUCE
PATTIES
- 1 cup white Basmati rice, rinsed (NOTE: I used brown Basmati)
- 1/2 cup red lentils, rinsed
- 1/2 teaspoon turmeric
- 3/4 teaspoon salt
- 2 tablespoons plus 4 teaspoons light sesame or peanut oil
- 1 teaspoon cumin seeds
- 2 cups finely chopped onion
- 1/4 teaspoon red-pepper flakes
- 1/4 arrowroot powder
CILANTRO SAUCE
- 1 cup cilantro
- 1/4 coconut milk
- 2 tablespoons fresh lemon juice
- 1 jalapeno chile, stemmed and seeded
- 1 small garlic clove, peeled
- 1 1-inch piece fresh ginger, peeled
- 1/4 teaspoon salt
PATTIES
1. Place the rice and lentils into medium saucepan with 4 cups water, the turmeric, and the salt. Cover, bring to a boil, reduce heat and simmer ten minutes. Remove the cover and simmer, without stirring, until water is absorbed, about 15 minutes.
2. Meanwhile, heat 2 tablespoons of the oil in a medium non-stick skillet over medium high heat. Add the cumin and cook, stirring frequently, until fragrant, about 1 minute. Add onions. Cook over medium heat, stirring frequently, until browned, about 12 minutes. Stir in red pepper flakes. Remove from heat and add to the lentils and rice. Combine well. Spoon the mixture into the bowl and let stand until cool, about 20 minutes.
3. Spread arrowroot onto a large plate. Form the lentil-rice mixture into 8 patties. Evenly coat patties with the arrowroot and set aside until ready to cook.
4. Heat 2 teaspoons of oil over medium-high heat. Cook 4 patties until golden, about two minutes per side. Heat remaining oil and repeat with remaining patties. Serve warm, drizzled with cilantro sauce.
CILANTRO SAUCE
1. Put cilantro, coconut milk, lemon juice, jalapeno, garlic, ginger and salt into a blender. Blend until smooth.
Just as a note, I used olive oil and they were fine. Also omitted the ginger, cause I don't like ginger, and they were fine
ENJOY!
