Quinoa Recipes for Clean Eating?

I just recently bought my first box of quinoa at the store. I loved it! I am following (or trying really hard to) Tosca's Clean Eating now for over a week, and I needed a different grain option. Anyone out there have any good recipes? I also bought a pound of the quinoa flour. Any bread recipes? Thanks for the help, I can always count on you all! By the way, I can't believe how much more energy I have on this eating program! I hate breakfast with a passion, but if you do it right, you really eat fewer calories during the day. Today I am going to try and make omelets like she does in her book in a ziplock, we will see.
 
This is from Shape magazine, but I can't find it at shape.com. Weird.

Anyway,

1 cup uncooked quinoa
2 carrots, peeled & diced
1/2 cup frozen green peas, thawed
1/3 cup minced red onion (eww, I hate onions! but you might love 'em)
2 tbsp chopped fresh basil
1 1/2 tbsp red-wine vinegar
2 tsp. olive oil

Combine quinoa and 2 cups of water in a medium saucepan. Set the pan over high heat and bring to a boil. Reduce heat to low, cover and cook 10 minutes, until liquid is absorbed and quinoa is translucent. Remove from heat and stir in carrots, peas, onion (yuck), basil, vinegar and oil. Season with salt and black pepper.

If you've got a Trader Joe's in your town--look for the big plastic container of fresh basil--it's a LOT and it's CHEAP!

I never read her book so I am not sure what she considers clean eating but you can sub it for a lot of differant grains in recipes. You can sub it for oatmeal and eat it for breakfast. For example if you add some soy milk, chopped walnuts and dried fruit it is tastey. You can also use it to replace rice in stir fries or recipes like stuffed peppers.

There are also a tone of recipes that use it in a black bean salad recipe. Here is one out of the La Dolce Vegan cookbook by Sarah Kramer. I have tried this recipe and really like making a batch of it over the weekend and brown bagging it during the week.

Dressing:
1 tbsp Olive oil
2 tbsp oil(flax, hemp, grapeseed)
2 tbsp balsamic vinegar
1/4 tsp chilli powder
1/4 tsp salt
1/4 tsp black pepper

Salad
1/4 cub quinoa washed and rinsed
1 19 oz can of black beans, rinsed
2 green onions, minced
1 large tomato, chopped
1/4 small green pepper chopped
1 small avocado, cubed
1/4 cup cilantro, finly chopped
1/4 cup frozedn corn niblets


Direction
1. cook the quinoa
2. stir together rest of salad(except corn)
3. stir together dressing
4. When quinoa is done remove from the heat and add corn, let sit for five minutes
5. remove lid from quinoa and corn pot and let cool
6. stir everything together
 
It makes a good substitute for bulgar in tabouli.

Also, it makes a good salad in general. Just cook some up, add your favorite shredded or chopped or small veggies (carrots, red onions, peas, spinach) and a dressing (basic oil and vinegar, mirin--japanese wine vinegar-- or whatever you like).

Some other good grains to try: millet, amaranth (very similar to quinoa).

Thanks for the recipe, I am making it for dinner. As for the ziplock omletes, I think that they have potential, it just may take a little work to get consistency right. Also, call me crazy, is it okay to cook in a ziplock, or are there chemicals being leached into the omlete?

I wouldn't do it. The plastic is in contact with the food, so the potential of toxins leaching into the food is very high. Also, zip lock bags are not meant to be cooked in, so may not be made of inert plastic, but of a more reactive plastic.
 
Yesterday I made a cold rice salad and subbed quinoa for the rice. It was delicious. I'm going to try making rice pudding using quinoa instead. (I'm using recipes from the RAVE Diet book and so far, they're quite tasty and very heathly). Anyway, I think quinoa is going to become my new favorite. It's very light and tasty and has a nice texture. And it's easy and quick to cook in the microwave. Love it!

Hi Carolyn,

the German word for quinoa is Quinoa :) I used to get it at the organic food store in Germany, but I am pretty sure it is mainstream by now and you can get it at any supermarket.

How are things going over there? I heard the weather is beautiful right now.

Hi Carola! Things are great here in Germany. At the end of the month we're heading over to Garmisch (sp?). The people here are wonderful and the weather is as well. I love it. The only problem is that I'm so far away from my family. You know what I mean.:)

I don't have a problem with being so far away from my family}( I mean, sometimes it sucks that my parents are not around, especially for my kids, however, my Mom and I do much better, if we don't live too close, it's great to talk on the phone every couple of weeks and see them once a year, anything more would end up in a catastrophe!

Are you going to move to Garmisch or are you just going to visit. I LOVE that area!

We're just visiting Garmisch. We're actually living in a suburb of Heidelberg called Gauangelloch. It's so beautiful!! I love that each neighborhood has it's own fruit and vegetable market, winery, bakery (of course!), supermarkt, bank, just everything you need. So earth friendly. My cats are in HEAVEN here!
