Quick, easy recipes for one?

So my last post about not enjoying food got me thinking that maybe I'm eating the *wrong* foods, since many recipes are made for families and take a while to make.

Well I was wondering if anyone knew about a recipe book or website that has healthy, quick and easy recipes for one (or two). I think if I don't need a thousand ingredients and two hours to make a meal I will be more apt to make one. TIA!!
 
A lot of soups, stews and chilis are very quick and easy to make. Another nice thing about these is that most are very easy to freeze into smaller portions and reheat later on. That way you can still use a recipe that's written for 4 or 6 people.

I really like the Allrecipes site: http://allrecipes.com/ You can search on lots of categories, like "Quick & Easy", and people give stuff pretty honest reviews.
 
I know I have seen at least one recipe book that had recipes for two people... can't remember any other details, but I'll bet amazon could find it for you.....
 
I have one that's called "Healthy Cooking For Two" by Brenda Shriver. I would imagine there must be more like it, too.
 
quick & easy chilli

1 jar salsa (whatever kind you like), 1 can kidney beans, 1 can black beans, leftover cooked chicken or beef, and low fat cheese (I like cheddar). I rinse the beans before I put them in, but I mix it all together and heat for 20 min's and wala, quick chilli. You can add rice to it if you like, or a salad.
