Quick dinner recipes

Anyone have quick dinner ideas and recipes. My fiance says he doesn't want to eat dinner so late anymore. I get home, workout and by the time I am finished it is close to 7 and we are eating about 7:30 or 8. I'd like something I can pop in the oven and will cook while I am working out.

Hi Beth,
I think I would introduce the fiance to the wonderful world of cooking!! Couldnt he some nights prepare meals while you are working out? I really dont want to sound mean, but if it bothers him to eat so late, he could sure help out!!

But a more practical idea--a couple of friends and I would take one day a month and make several diff recipes,that could be frozen, and then just pulled out for dinner before you work out. We will also cut up things like bell peppers, onions etc and freeze so that is all ready to go when you need them--its a real time saver, and alot of fun too.

It sounds like soups and stews/chilis in a crockpot may be your best bet. They can simmer while you workout.
If you don't have a crockpot, use your stove top on simmer mode.
If you want to use the oven, you could bake sweet potatoes and chicken for one hour on low heat like 325 while you work out, but that gets boring after a while.
Jessica on this forum posted a good baked enchilada recipe that requires the oven:

Bean Enchiladas with Fresh Tomato Salsa


Olive oil cooking spray
1 c. chopped onion
3 garlic cloves, minced
1 tsp. ground cumin
1 tsp. chili powder
1 c. frozen whole kernel corn,
thawed
½ c. canned veggie broth or chicken broth
3 T. chopped fresh cilantro
1/8 tsp. salt
1/8 tsp. pepper
2 (16-oz) cans pinto beans
8 corn tortillas
Fresh tomato salsa
¼ c. non-fat or low-fat sour cream

Heat cooking spray in a large skillet over med. heat. Add onion and garlic, sauté 3 mins. Add cumin and chili powder, sauté 1 min. Stir in corn and the next 5 ingredients (corn through beans). Partially cover and cook 10 mins. or until most of liquid evaporates. Remove from heat. Mash beans. Warm tortillas in skillet sprayed with cooking spray.
Spoon about 1/3 cup bean mixture down center of each tortilla. Place enchiladas in a 9x13 inch-baking dish coated with cooking spray. Spoon fresh tomato salsa over enchiladas, cover and bake at 350 degrees for 20 mins. Serve with sour cream.


Fresh Tomato Salsa

4 med. tomatoes
1 lg. Onion
olive oil cooking spray
2 T. coarsely chopped, seeded jalapeno peppers
3 tsp. minced fresh garlic
¼ c. chopped fresh cilantro
3 T. fresh lime juice
1/8 tsp. salt
1/8 tsp. pepper

Core tomatoes and cut each in half crosswise, push seeds out of middle section with thumbs. Peel onion, leaving root intact, cut into 6 wedges. Place the tomato halves and onion wedges on a broiler pan coated with cooking spray. Broil 5 mins. Turn veggies over, broil 5 mins. or until onion is slightly blackened and tomatoes are tender. Trim root from the onion wedges; place the tomatoes and onions in a food processor, pulse 3 times or until chopped. Set aside. Heat olive oil cooking spray in a large skillet over med. heat. Add jalapeno and garlic. Sauté 30 seconds. Add tomato mixture, cilantro, lime juice, salt and pepper, cook over med.-low heat3 mins.
 
Jayne, two great ideas! Let him cook, or get something out of the freezer. I cook on the weekends and have stuff stockpiled in the freezer, and it sure helps!
